The Game Plan

  1. Place the chuck roast in the slow cooker fat-side up.

  2. Sprinkle the Italian dressing mix all over the top and sides of the roast.

  3. Tuck the pepperoncini peppers around the roast.

  4. Cover and cook on LOW for 8 hours.

  5. The meat should shred with zero resistance.

  6. Pull the beef out onto a cutting board.

  7. Return the shredded beef to the pot.

  8. Toast the hoagie rolls under the broiler until just golden, about 2 minutes.

  9. Pile the beef generously onto the rolls.

  10. Serve each sandwich with a small bowl of warm jus for dipping.

The Day 2 Evolution

Spread on pizza dough with mozzarella for Italian beef pizza

Stuff into quesadillas with provolone cheese

Toss into fried rice with soy sauce and sesame oil (seriously, it works)

Serve over creamy polenta with a ladle of jus

Pile onto nachos with melted provolone and pickled peppers

Wrap in egg roll wrappers and fry for Italian beef egg rolls
