The Game Plan

  1. Cook ground pork and beef in a large skillet over medium heat, breaking into small pieces.

  2. Add onion and cook 4-5 minutes until softened. Add garlic, cinnamon, cloves, allspice, thyme, and bay leaf. Cook 1 minute.

  3. Add diced potato and beef broth. Simmer 15-20 minutes, stirring occasionally, until potatoes are tender and most liquid is absorbed. The filling should be moist but not soupy. Discard bay leaf. Season with salt and pepper. Let cool.

  4. Preheat oven to 400°F (200°C).

  5. Press one pie crust into a 9-inch pie plate. Fill with the cooled meat mixture. Top with the second crust. Crimp edges to seal and cut a few small slits in the top for steam.

  6. Brush with egg wash.

  7. Bake 35-40 minutes until the crust is deep golden brown.

  8. Let rest 10 minutes before slicing.
