"Korean sushi rolls stuffed with seasoned rice, vegetables, and beef — colorful, portable, and wildly snackable. Costco Korea sells these by the platter, but a bag of bulk rice and some nori gets you there for a fraction of the price."

The Game Plan

  1. **Beef:** Cook ground beef in a skillet with soy sauce, sugar, garlic, and a splash of sesame oil until browned. Set aside.

  2. **Eggs:** Beat eggs with a pinch of salt. Cook as a thin omelet in a non-stick pan. Roll and slice into thin strips.

  3. **Carrots:** Sauté julienned carrots in a little oil with a pinch of salt for 2 minutes.

  4. **Spinach:** Toss blanched spinach with 1 teaspoon sesame oil, a pinch of salt, and sesame seeds.

  5. **Assemble:** Place a nori sheet on a bamboo rolling mat (shiny side down). Spread a thin layer of seasoned rice, leaving 1 inch at the top edge. Lay fillings in a line across the center.

  6. Roll tightly from the bottom, tucking as you go. Seal the top edge with a dab of water.

  7. Brush the outside with sesame oil. Slice each roll into 8 pieces with a sharp, wet knife.
