Char Siu (BBQ Pork)

"Cantonese-style BBQ pork — glossy, caramelized, sticky-sweet with charred edges. Costco China sells this ready-to-eat in the deli. Make it with a Kirkland pork shoulder and your oven does the work."

The Game Plan

  1. Cut pork shoulder into 2-3 long strips, about 2 inches thick. This maximizes the surface area for caramelization.

  2. Mix all marinade ingredients. Reserve 1/4 cup for the glaze. Add pork to the remaining marinade, toss to coat. Cover and refrigerate at least 4 hours, overnight is best.

  3. Preheat oven to 425°F (220°C). Line a baking sheet with foil and set a wire rack on top.

  4. Place pork strips on the rack. Roast 15 minutes.

  5. Mix reserved marinade with 2 tablespoons honey for the glaze.

  6. Flip pork, brush with glaze. Roast 10 minutes. Flip and glaze again. Roast a final 10-15 minutes until caramelized and slightly charred on the edges. Internal temperature should be at least 145°F.

  7. Let rest 10 minutes. Slice thin against the grain.
