The Game Plan

Mix flour and salt in a bowl. Pour in boiling water and stir with chopsticks or a fork until a shaggy dough forms. Knead 5 minutes until smooth. Cover and rest 30 minutes.

Divide dough into 4 pieces. Roll each piece into a thin circle (about 10 inches).

Brush the surface with sesame oil. Scatter sliced scallions generously across.

Roll up tightly into a log, then coil the log into a spiral. Flatten with your palm, then roll out again into a circle (about 7-8 inches). The layers create the flakiness.

Heat 2-3 tablespoons vegetable oil in a skillet over medium heat. Fry each pancake 2-3 minutes per side until golden and crispy.

Drain on paper towels. Sprinkle with flaky salt. Cut into wedges.

Mix dipping sauce ingredients and serve alongside.
