The Game Plan

  1. Preheat oven to 375°F (190°C). Line a baking sheet with foil.

  2. Soak breadcrumbs in milk for 5 minutes.

  3. In a large bowl, combine ground beef, soaked breadcrumbs, eggs, onion, garlic, 1/2 cup ketchup, Worcestershire, thyme, salt, and pepper. Mix with your hands until just combined — don't overwork it or the meatloaf gets dense.

  4. Shape into a loaf about 10 inches long on the prepared baking sheet.

  5. Mix the glaze: 1/4 cup ketchup, brown sugar, and Dijon mustard. Spread over the top of the meatloaf.

  6. Bake 55-65 minutes until the internal temperature reaches 160°F. Let rest 10 minutes before slicing.
