The Game Plan

  1. Brown ground beef in a large pot or Dutch oven over medium-high heat, breaking it into small pieces. Drain excess fat, leaving about 1 tablespoon in the pot.

  2. Add onion and bell pepper. Cook 5 minutes until softened. Add garlic and cook 1 minute.

  3. Stir in chili powder, cumin, paprika, and cayenne. Cook 1 minute until fragrant.

  4. Add tomato paste and stir for 2 minutes. Pour in diced tomatoes, kidney beans (drained and rinsed), beef broth, and Worcestershire sauce.

  5. Bring to a boil, then reduce to a low simmer. Cook uncovered 30-40 minutes, stirring occasionally, until thickened.

  6. Season with salt and pepper. Serve topped with shredded cheddar, sour cream, and green onions.
