The Game Plan

Heat olive oil in a large Dutch oven or stockpot over medium-high heat. Add onion, poblano, and jalapeño. Cook 5 minutes until softened.

Add garlic, cumin, chili powder, and smoked paprika. Stir for 1 minute until fragrant — this blooms the spices and builds that smoky backbone.

Pour in chicken broth and diced tomatoes with their juices. Bring to a boil, then reduce to a simmer.

Add shredded rotisserie chicken, corn, and black beans. Simmer 20 minutes to let everything meld together.

Season with salt and pepper. Squeeze in the juice of one lime and stir.

Ladle into bowls and pile on the toppings: tortilla strips, diced avocado, a squeeze of lime, sour cream, cheese, and cilantro.
