The Game Plan

  1. Preheat oven to 375°F (190°C). Grease a 9x13 baking dish.

  2. In a bowl, mix shredded chicken with sour cream, diced tomatoes, green chiles, cumin, garlic powder, and 1 cup of cheese. Season with salt and pepper.

  3. Spread 1/2 cup enchilada sauce on the bottom of the baking dish.

  4. Layer: tortillas (tear to fit), half the chicken mixture, 1/2 cup cheese, more sauce. Repeat. Top with remaining tortillas, remaining sauce, and remaining cheese.

  5. Cover with foil and bake 20 minutes. Remove foil and bake 10 more minutes until cheese is bubbly and edges are crispy.

  6. Let rest 5 minutes before slicing. Top with cilantro and green onions.

Cut a square and fry it in a skillet until crispy on both sides
