Stuffed Bell Peppers

The Game Plan

  1. Preheat oven to 375°F (190°C). Cut the tops off the bell peppers and remove seeds. Stand them upright in a baking dish.

  2. Brown ground beef in a large skillet over medium-high heat, breaking it into small pieces. Drain excess fat.

  3. Add onion and cook 3-4 minutes until softened. Add garlic, Italian seasoning, and paprika. Cook 1 minute.

  4. Stir in diced tomatoes, cooked rice, and half the cheese. Season with salt and pepper.

  5. Stuff each pepper generously with the beef mixture, mounding it on top. Pour tomato sauce into the bottom of the baking dish and add 1/4 cup water.

  6. Cover tightly with foil and bake 30 minutes. Remove foil, top each pepper with remaining cheese, and bake uncovered 10-15 minutes until cheese is melted and bubbly.

The Day 2 Evolution

Chop up a leftover pepper and scramble it into eggs

Scoop out the filling and use it as taco meat

Slice in half and serve open-faced on toast
