Chicken Noodle Soup

The Game Plan

Heat olive oil in a large pot or Dutch oven over medium heat. Add onion, carrots, and celery. Cook 5 minutes until the onion is translucent and the veggies start to soften.

Add garlic, thyme, and rosemary. Stir for about 1 minute until fragrant.

Pour in all 8 cups of chicken broth. Drop in the bay leaves. Bring to a boil, then reduce to a steady simmer for 10 minutes until the carrots are just tender.

Add the egg noodles and cook 7–8 minutes until al dente. The noodles will soak up broth, so don't skip any liquid.

Stir in the shredded rotisserie chicken and heat through for 2–3 minutes.

Remove bay leaves. Season generously with salt and pepper. Ladle into bowls and hit it with fresh parsley if you're feeling fancy.
