The Game Plan

  1. Preheat oven to 375°F (190°C). Place pie crust in a 9-inch deep-dish pie plate. Prick the bottom with a fork. Blind bake with pie weights or dried beans for 10 minutes. Remove weights and bake 5 more minutes until lightly golden.

  2. Cook bacon until crispy. Crumble into pieces.

  3. Whisk together eggs, heavy cream, milk, nutmeg, salt, and pepper until smooth.

  4. Scatter bacon and cheese across the bottom of the par-baked crust.

  5. Pour egg mixture over the top. It should come nearly to the top of the crust.

  6. Bake 35-40 minutes until the center is just set — it should jiggle slightly like Jell-O when you tap the pan. It will firm up as it cools.

  7. Let rest 10 minutes before slicing. Sprinkle with chives.
