The Game Plan

  1. Preheat oven to 375°F (190°C). Grease a 24-cup mini muffin tin (or work in two batches of 12).

  2. Roll out pie crust and cut into 24 rounds using a 3-inch cutter. Press each round into a muffin cup.

  3. Whisk together eggs, heavy cream, nutmeg, salt, and pepper.

  4. **Lorraine cups:** Place bacon crumbles and cheese in 12 of the crusts. Pour egg mixture to fill 3/4 full.

  5. **Florentine cups:** Place spinach, cheese, and sun-dried tomatoes in the other 12 crusts. Pour egg mixture to fill 3/4 full.

  6. Bake 22-25 minutes until the filling is puffed and set and the crust is golden.

  7. Let cool 5 minutes in the tin, then pop them out.

The Day 2 Evolution

Pack 3-4 in a lunch box with a small salad for a complete meal

Serve at room temperature as part of a brunch spread
