Brownies

The Game Plan

Preheat oven to 350°F (175°C). Line a 9x13 baking pan with parchment paper, leaving overhang on the sides.

Melt butter in a large saucepan over low heat. Remove from heat and stir in 1 cup of chocolate chips until melted and smooth.

Whisk in sugar, then eggs one at a time, then vanilla.

Sift in cocoa powder, flour, salt, and espresso powder. Fold until just combined — don't overmix.

Fold in remaining 1 cup chocolate chips.

Pour into prepared pan and spread evenly. The batter will be thick.

Bake 28-32 minutes. A toothpick should come out with moist crumbs (not wet batter, not clean). Err on the side of underdone — they firm up as they cool.

Let cool completely in the pan before slicing. Use the parchment overhang to lift the whole slab out.
