Chocolate Croissants

"Pain au chocolat from the Costco bakery — flaky, buttery, with a stripe of dark chocolate running through the middle. The from-scratch version is a project, but there's a puff pastry shortcut that gets you 90% of the way there."

The Game Plan

  1. Preheat oven to 400°F (200°C). Line a baking sheet with parchment paper.

  2. Unfold puff pastry and cut each sheet into 4 rectangles (8 total).

  3. Place a stick of chocolate (about 1 oz) along the short end of each rectangle. Roll up tightly, seam-side down.

  4. Brush tops with beaten egg. Sprinkle with a pinch of sugar.

  5. Bake 18-20 minutes until deeply golden and puffed.

  6. Let cool 5 minutes — the chocolate inside is lava.
