The Game Plan

  1. Preheat oven to 375°F (190°C). Line a baking sheet with parchment paper.

  2. **Almond cream:** Beat butter and sugar until fluffy. Beat in egg, then fold in almond flour, all-purpose flour, almond extract, and salt.

  3. **Simple syrup:** Heat sugar and water in a small saucepan until sugar dissolves.

  4. Slice each croissant in half horizontally. Brush the cut sides with simple syrup.

  5. Spread 2 tablespoons of almond cream on the bottom half. Replace the top. Spread another tablespoon of almond cream on top of the croissant. Press sliced almonds into it.

  6. Bake 12-15 minutes until the almond cream is golden and set.

  7. Dust with powdered sugar while warm.

Slice and use as the base for an over-the-top French toast

Crumble into a bowl and top with vanilla ice cream and a drizzle of honey
