Almond Croissants

The Game Plan

Preheat oven to 375°F (190°C). Line a baking sheet with parchment paper.

**Almond cream:** Beat butter and sugar until fluffy. Beat in egg, then fold in almond flour, all-purpose flour, almond extract, and salt.

**Simple syrup:** Heat sugar and water in a small saucepan until sugar dissolves.

Slice each croissant in half horizontally. Brush the cut sides with simple syrup.

Spread 2 tablespoons of almond cream on the bottom half. Replace the top. Spread another tablespoon of almond cream on top of the croissant. Press sliced almonds into it.

Bake 12-15 minutes until the almond cream is golden and set.

Dust with powdered sugar while warm.
