The Game Plan

  1. Cook pasta according to package directions. Reserve 1 cup of pasta water before draining.

  2. While pasta cooks, heat olive oil and 2 tablespoons of butter in a large skillet over medium-high heat.

  3. Pat shrimp dry and season with salt and pepper. Sear for 1-2 minutes per side until pink. Remove from pan.

  4. In the same pan, add garlic and red pepper flakes. Cook 30 seconds until fragrant.

  5. Add white wine and lemon juice. Let it reduce by half, about 2 minutes.

  6. Add the remaining 2 tablespoons butter, drained pasta, and shrimp back to the pan. Toss to coat, adding pasta water a splash at a time until the sauce coats the pasta.

  7. Top with Parmesan and fresh parsley. Serve immediately.
