The Game Plan

  1. Preheat oven to 425°F (220°C). Toss potato cubes with olive oil, salt, and smoked paprika on a sheet pan. Roast for 20 minutes, flipping halfway, until golden and crispy.

  2. While potatoes roast, pat steak cubes dry with paper towels and season generously with salt and pepper.

  3. Heat a large cast-iron or heavy skillet over high heat. Add 1 tablespoon butter and sear steak bites in a single layer, about 2 minutes per side for medium. Work in batches to avoid crowding the pan.

  4. Reduce heat to medium. Add remaining 2 tablespoons butter, minced garlic, and thyme to the skillet. Baste the steak bites with the melted garlic butter for about 1 minute until fragrant.

  5. Plate the steak bites over roasted potatoes. Spoon any remaining garlic butter from the pan on top and finish with chopped parsley.
