Dump-and-Go Chili
"Thick, beefy chili that practically builds itself — dump everything in the pot and let Costco's ground beef do the heavy lifting."
The Game Plan

Heat the olive oil in a large pot or Dutch oven over medium-high heat. Add the diced onion and cook for 3-4 minutes until it starts to soften.

Add the ground beef and garlic. Break the meat up with a wooden spoon and cook until browned and no pink remains, about 5-6 minutes. Don't bother draining -- the fat adds flavor.

Add the chili powder, cumin, smoked paprika, oregano, cayenne, salt, and pepper. Stir everything together and cook for about 30 seconds until the spices are fragrant.

Dump in the diced tomatoes (with their juice), tomato sauce, drained black beans, and drained kidney beans. Stir to combine.

Bring the pot to a boil, then reduce heat to low. Cover and let it simmer for 25-30 minutes, stirring occasionally. The longer it sits, the better the flavors meld.

Taste and adjust seasoning. If it needs more heat, add cayenne. If it needs brightness, stir in a squeeze of lime juice.

Ladle into bowls and pile on whatever toppings you like.
