Slow Cooker French Dip Sandwiches
"Tender, juicy beef piled on a hoagie roll with a cup of rich au jus for dipping — the sandwich that makes you close your eyes mid-bite."
The Game Plan
-
Place the sliced onion in an even layer on the bottom of the slow cooker. This is your roast's little bed — treat it right.
-
Set the chuck roast on top of the onions.
-
Pour beef broth over the roast, then add Worcestershire sauce, garlic, Italian seasoning, thyme, salt, and pepper.
-
Cover and cook on LOW for 8 hours, until the beef is fall-apart tender and practically shreds itself.
-
Remove the roast and shred with two forks. It should put up absolutely no resistance.
-
Return the shredded beef to the slow cooker and stir it into the cooking liquid. Let it soak for a few minutes — this is where the magic happens.
-
Scoop shredded beef onto hoagie rolls and top each with a slice of provolone.
-
Broil open-faced in the oven for 1-2 minutes until the cheese is melted and bubbly.
-
Ladle the remaining cooking liquid through a fine mesh strainer into small bowls for dipping — that's your au jus, and it's liquid gold.
