Greek Chicken Meal Prep

The Game Plan

Make the marinade by whisking together the olive oil, red wine vinegar, minced garlic, oregano, thyme, lemon juice, lemon zest, salt, and pepper in a bowl.

Trim any excess fat from the chicken thighs and place them in a large zip-top bag or container. Pour the marinade over the chicken and make sure every piece is coated. Refrigerate for at least 30 minutes, or up to overnight for maximum flavor.

Cook the jasmine rice according to package directions. Fluff with a fork and let it cool slightly.

While the rice cooks, preheat a large skillet or grill pan over medium-high heat. Remove the chicken from the marinade and shake off any excess.

Cook the chicken thighs for 5-7 minutes per side until they develop a nice golden-brown sear and the internal temperature reaches 165°F. Let them rest for 5 minutes, then slice against the grain into strips.

While everything cooks, prep your veggies: dice the cucumbers, halve the grape tomatoes, and thinly slice the red onion.

Divide the rice among 6 meal prep containers. Arrange the sliced chicken alongside the rice. Add the diced cucumber, tomatoes, red onion, and a generous sprinkle of feta crumbles to each container.

Pack the tzatziki in small separate containers or sauce cups -- about 1 tablespoon per serving. Add olives if using.
