The Game Plan

  1. Heat a large skillet over medium-high heat. Cook crumbled sausage, breaking it into small pieces, until browned and cooked through — about 7 minutes. Transfer to a bowl.

  2. In the same skillet (drain excess grease if needed), add a drizzle of oil. Sauté diced bell peppers for 3 minutes until slightly softened.

  3. Whisk eggs with salt, pepper, and garlic powder. Pour into the skillet with the peppers. Scramble over medium heat until just set — keep them slightly soft since they'll get reheated later.

  4. Combine scrambled eggs, cooked sausage, and cheese in a large bowl. Toss gently.

  5. Warm tortillas in the microwave for 15 seconds each (makes them pliable and less likely to tear).

  6. Scoop about 1/2 cup of filling onto each tortilla. Fold in the sides, then roll up tightly from the bottom.

  7. Wrap each burrito individually in aluminum foil.

  8. Eat now, or freeze the foil-wrapped burritos in a gallon freezer bag.

The Day 2 Evolution

Unwrap a burrito and chop it into a skillet for a breakfast hash

Cut in half and serve with a side of guacamole and salsa

Crumble into a bowl and top with sour cream for a deconstructed burrito bowl
