The Game Plan

  1. Preheat oven to 400°F (200°C).

  2. Spread sliced peppers, onion wedges, and smashed garlic on a large sheet pan. Drizzle with olive oil, sprinkle with Italian seasoning, salt, and pepper. Toss to coat.

  3. Nestle the sausage links among the vegetables.

  4. Roast for 25-30 minutes, flipping the sausages halfway through, until sausages are cooked through and peppers are tender and slightly charred.

  5. Serve as-is, over rice or pasta, or stuffed into hoagie rolls for sausage and pepper subs.
