Chicken Parmesan

The Game Plan

Preheat oven to broil. Halve each chicken breast horizontally (butterfly and cut through) to get 4 thin cutlets. Place between plastic wrap and pound to an even 1/2-inch thickness.

Set up a breading station: flour in one shallow dish, beaten eggs in a second, and panko mixed with Parmesan, garlic powder, Italian seasoning, salt, and pepper in a third.

Dredge each cutlet in flour, dip in egg, then press into the panko mixture on both sides.

Heat olive oil in a large oven-safe skillet over medium-high heat. Cook the breaded chicken for 3-4 minutes per side until golden and cooked through (internal temp 165F).

Spoon marinara over each cutlet and top with mozzarella. Transfer skillet to the oven and broil for 2-3 minutes until cheese is bubbly and golden.

While the chicken cooks, boil pasta according to package directions. Serve chicken over pasta with extra sauce on the side.
