Southwest Chicken Salad

The Game Plan

Shred about 2 cups of chicken from the rotisserie bird. Use breast and thigh meat — save the rest for another meal this week.

Make the dressing: whisk together lime juice, olive oil, minced garlic, cumin, salt, and pepper. Stir in the chopped cilantro.

Chop the romaine and divide among four bowls.

Top each bowl with shredded chicken, black beans, roasted corn, diced tomatoes, and avocado.

Drizzle the cilantro-lime dressing over everything. Toss gently or leave it looking pretty — your call.
