Taco Pasta

The Game Plan

  1. Bring a large pot of salted water to a boil. Cook the rotini according to package directions. Drain and set aside.

  2. In the same pot (one pot = one hero), brown the ground beef over medium-high heat, breaking it into crumbles. Drain any excess fat.

  3. Add the taco seasoning and 1 cup of water. Stir and let it simmer for 2–3 minutes until the sauce thickens.

  4. Add the salsa and stir to combine. Let it bubble for another minute.

  5. Add the cooked pasta back to the pot and toss everything together until the noodles are coated in beefy, taco-y goodness.

  6. Sprinkle the shredded cheese over the top. Cover with a lid for 2 minutes to let it get melty and irresistible.

  7. Serve straight from the pot (because you're feeding a crowd and presentation is a suggestion, not a rule). Top with sour cream and whatever else you've got.

Stuff into bell peppers and bake at 375°F for 20 minutes for taco-stuffed peppers

Scoop onto tortilla chips with extra cheese for the world's best nachos
