Tres Leches Cake

The Game Plan

Remove the frosting from the Costco sheet cake. Use a long knife or offset spatula to scrape it off as cleanly as you can. Set the frosting aside — you won't need it for this recipe, but it's good on toast.

Cut the cake to fit a 9x13-inch baking dish. You may not need the entire sheet cake — save the extra for snacking or a trifle.

Poke holes all over the top of the cake using a fork or a skewer. Be thorough — every half inch or so. The more holes, the more milk the cake absorbs.

Whisk together the evaporated milk, condensed milk, 1 cup of the heavy cream, and the vanilla in a bowl or large measuring cup.

Slowly pour the milk mixture over the cake, starting around the edges and working toward the center. Let it pool and absorb before adding more. Take your time with this step — it makes a difference.

Cover with plastic wrap and refrigerate for at least 4 hours, or overnight. The cake needs time to soak up all that liquid.

When ready to serve, whip the remaining 1 cup of heavy cream with 2 tablespoons of sugar until stiff peaks form. Spread it evenly over the top of the soaked cake.

Dust with cinnamon if you like, and garnish with sliced strawberries or cherries. Slice and serve cold.
