Spanakopita
"Flaky, buttery phyllo triangles stuffed with spinach and feta — the Costco deli sells 36 for $13 but homemade ones are crispier, cheesier, and you get to eat them hot."
The Game Plan
-
Preheat oven to 375°F (190°C). Line two baking sheets with parchment paper.
-
Heat olive oil in a skillet over medium heat. Cook onion 3-4 minutes until soft. Add garlic and cook 30 seconds. Let cool.
-
In a bowl, combine squeezed spinach, crumbled feta, eggs, onion mixture, dill, and nutmeg. Season with salt and pepper. Mix well.
-
Unroll phyllo dough and keep covered with a damp towel (it dries out fast). Take one sheet, brush with melted butter, and cut lengthwise into 3 strips.
-
Place a tablespoon of filling at the bottom corner of each strip. Fold corner up to make a triangle, then keep folding like a flag until you reach the end. Brush the outside with more butter.
-
Repeat until filling is used up. Place triangles seam-side down on baking sheets.
-
Bake 20-25 minutes until deep golden brown and crispy.
