The Game Plan

  1. Preheat oven to 375°F (190°C). Line two baking sheets with parchment paper.

  2. Heat olive oil in a skillet over medium heat. Cook onion 3-4 minutes until soft. Add garlic and cook 30 seconds. Let cool.

  3. In a bowl, combine squeezed spinach, crumbled feta, eggs, onion mixture, dill, and nutmeg. Season with salt and pepper. Mix well.

  4. Unroll phyllo dough and keep covered with a damp towel (it dries out fast). Take one sheet, brush with melted butter, and cut lengthwise into 3 strips.

  5. Place a tablespoon of filling at the bottom corner of each strip. Fold corner up to make a triangle, then keep folding like a flag until you reach the end. Brush the outside with more butter.

  6. Repeat until filling is used up. Place triangles seam-side down on baking sheets.

  7. Bake 20-25 minutes until deep golden brown and crispy.
