Clam Chowder

The Game Plan

Cook bacon in a large Dutch oven over medium heat until crispy. Remove and crumble. Leave 2 tablespoons of fat in the pot.

Add butter, onion, and celery. Cook 5 minutes until softened. Add garlic and cook 1 minute.

Sprinkle flour over the vegetables and stir for 2 minutes to cook out the raw taste.

Slowly pour in clam juice while stirring to prevent lumps. Add potatoes, bay leaves, and thyme. Bring to a simmer and cook 15 minutes until potatoes are tender.

Stir in heavy cream, milk, and clams. Heat through for 5 minutes — don't let it boil or the clams get rubbery.

Remove bay leaves. Season with salt and pepper. Serve topped with crumbled bacon and chives.
