The Game Plan

  1. Slice chicken thighs into thin strips. Toss with chili powder, cumin, garlic powder, smoked paprika, onion powder, salt, and half the lime juice.

  2. Heat olive oil in a large skillet or on a griddle over high heat. Cook chicken strips 3-4 minutes per side until charred and cooked through. Let rest 2 minutes, then chop into small pieces.

  3. Warm tortillas directly over a gas flame or in a dry skillet until slightly charred and pliable, about 30 seconds per side.

  4. Dice avocados and toss with remaining lime juice and a pinch of salt.

  5. Build tacos: tortilla, chicken, diced onion, avocado, cilantro, and a drizzle of salsa verde.
