The Game Plan

  1. Whisk together miso paste, mirin, soy sauce, rice vinegar, brown sugar, and sesame oil until smooth.

  2. Pat salmon fillets dry. Place in a shallow dish and spoon the miso glaze over each fillet, coating the top and sides.

  3. If you have time, cover and marinate in the fridge for 30 minutes (or up to 4 hours). If not, proceed — it's still excellent.

  4. Set oven to broil. Line a sheet pan with foil and lightly oil it.

  5. Place salmon skin-side down on the pan. Broil 6 inches from the element for 8–12 minutes, until the glaze is bubbly and deeply caramelized and the fish flakes easily.

  6. While salmon broils, steam broccoli and cook rice.

  7. Plate salmon over rice with broccoli alongside. Garnish with sesame seeds and green onions.

Flake over a rice bowl with avocado, cucumber, and soy sauce

Mix into fried rice with whatever veggies you have on hand

Toss with cold soba noodles and a splash of sesame oil
