The Game Plan

  1. Make the marinade: whisk together soy sauce, brown sugar, grated pear, garlic, ginger, mirin, sesame oil, and black pepper in a large bowl.

  2. Add the short ribs to the marinade, making sure each piece is coated. Cover and refrigerate for at least 2 hours, or overnight for the best flavor.

  3. When ready to cook, remove ribs from the fridge 20 minutes before cooking to take off the chill.

  4. Cook the rice according to package directions.

  5. Grill method: Heat grill to high. Grill ribs 3-4 minutes per side until charred and caramelized. Broiler method: Set oven to broil on high. Place ribs on a foil-lined sheet pan. Broil 4-5 minutes per side about 4 inches from the element.

  6. Let ribs rest 2 minutes. Serve over rice, garnished with sesame seeds and sliced green onions.
