Korean Short Ribs (LA Galbi)
"Costco's flanken-cut short ribs are perfect for LA galbi — thin-sliced, marinated in a sweet soy-pear sauce, and grilled or broiled until caramelized. Restaurant-quality at home."
The Game Plan
-
Make the marinade: whisk together soy sauce, brown sugar, grated pear, garlic, ginger, mirin, sesame oil, and black pepper in a large bowl.
-
Add the short ribs to the marinade, making sure each piece is coated. Cover and refrigerate for at least 2 hours, or overnight for the best flavor.
-
When ready to cook, remove ribs from the fridge 20 minutes before cooking to take off the chill.
-
Cook the rice according to package directions.
-
Grill method: Heat grill to high. Grill ribs 3-4 minutes per side until charred and caramelized. Broiler method: Set oven to broil on high. Place ribs on a foil-lined sheet pan. Broil 4-5 minutes per side about 4 inches from the element.
-
Let ribs rest 2 minutes. Serve over rice, garnished with sesame seeds and sliced green onions.
